For the cake:
Preheat oven to 350, and butter a 9" round pan or a 8" square pan.
- 2 eggs
- 1/2 cp. heavy cream
- 1 cp. sugar
- 1 cp. flour
- 1 tsp. baking powder
- a pinch salt
- 1 tsp. vanilla
Whisk together the cream and the eggs, and then mix in the sugar until smooth. Add the flour, baking powder, salt and flavorings and whisk until smooth again. Pour into pan and bake for about 25 minutes or until golden brown on top; insert a toothpick in the middle and if it comes out clean, it's done.
Let cool, at least somewhat.
For the topping:
- 3 TB butter
- 1 TB heavy cream
- 1/2 cp. brown sugar
- 1 cp. sweetened flaked coconut
Preheat the broiler.
In a saucepan, melt together the butter, cream, and brown sugar.
When melted, stir in the coconut.
Spread this over the top of the cake. Slide the cake under the broiler (about 5 inches underneath) and WATCH carefully - when you see (in a few minutes) small bubbles all over the top and it starts to brown, take it out of the oven. People adore this.
